The BEST Carrot Cake for the Easter Bunny Tradition

 

With Easter just around the corner, many of us are already thinking about the sweet treats we can make for the holiday. While chocolate eggs and bunnies are the classic choice, why not try something different this year and bake some delicious carrot cakes and carrot cookies for the Easter bunny? After all, what better way to celebrate spring than with some fresh, healthy, and tasty carrots?

We've been doing this tradition for the last 4 years and the kids love it! It's just like setting out the cookies for Santa, we leave the Easter Bunny some carrots and cake :-)

To help you get started, we've put together some simple and easy-to-follow recipes that you can try at home. Whether you're an experienced baker or a beginner, these recipes are sure to impress both the Easter bunny and your family and friends.

Carrot Cake Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 1 1/2 cups granulated sugar
  • 3 eggs
  • 2 cups grated carrots
  • 1 cup chopped walnuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat together the oil, sugar, and eggs until smooth.
  4. Add the dry ingredients to the wet ingredients and mix until well combined.
  5. Stir in the grated carrots and chopped walnuts (if using).
  6. Pour the batter into a greased 9x13-inch baking dish and smooth the top with a spatula.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool completely before serving.

Carrot Cookie Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup raisins (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Add the dry ingredients to the wet ingredients and mix until well combined.
  6. Stir in the grated carrots and raisins (if using).
  7. Drop tablespoon-sized scoops of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Both of these recipes are easy to make and can be customized to suit your preferences. You can add more or less sugar, spices, or nuts and raisins, depending on your taste. And if you're feeling creative, you can even decorate your carrot cake with some cream cheese frosting or your carrot cookies with some icing and sprinkles.
